a fiesta recipe to try:
Fast Fiesta Omelet - a MICROWAVE delight!
Drain all ingredients well for best results
• 1 cup corn kernels - approx 1l can (7 to 8
3/4 oz.) whole kernel corn; drain
• 2 tablespoons diced or chopped, green chilies
• 3/4 cup chopped tomato, drained well
• 1/8 teaspoon powdered chili (chili powder)
• 1/4 cup water
• 4 whole eggs
• 1 teaspoon butter or cooking oil (you can
use cooking spray instead of butter or oil)
• 1/4 cup shredded cheddar cheese; part into
1/8 cups separate portions
• Sliced pitted ripe olives, (this is optional)
• Cilantro sprigs, (this is optional)
To start your Fast Fiesta Omelet, stir together corn,
chilies, chili powder and tomato in small bowl. Place
in a skillet pan, cover the pan and cook on high heat
until hot, just a little over a minute. Keep it covered
and put it aside.
Heat your butter or oil on high heat until melted;
usually less than a minute. Swirl the hot butter or
oil to coat bottom evenly. Set the pan to the side,
off of the heat source.
Beat the eggs and water together in a small bowl. For
each omelet, pour 1/2 cup of the egg mixture into
a plate. Cover tightly with plastic wrap. Cook in
the microwave on full power 2 to 3 minutes, rotating
1/4 turn every 30 seconds. Do not stir. When top is
thickened and no visible liquid egg remains, fill
with 1/2 cup reserved corn mixture and 1 tablespoon
cheese. Fold omelet in half and slide onto serving
plate. Top with 1/4 cup of the corn mixture and 1
tablespoon of the cheese. Garnish with olives and
cilantro, if desired. Repeat with remaining ingredients.
Voila - you have Fast Fiesta Omelets!
